Prescribing Brown Rice and Plant-Based Nutrition in Korea

The Western diet continues to play an influential role in the global food landscape, and South Korea is no exception. The “rags-to-riches” country, once ravaged from a civil war and colonial occupation, is now sprawling with fast food restaurants, convenience stores, and internet cafes where processed, instant foods are abundant and accessible at any hour of the day and night. The shift away from a traditional Korean diet rich in starches and vegetables has resulted in an uptick of chronic diseases.
Join PPMNY in our Asian Pacific American Heritage web series to welcome Dr. Eui Chul Lee who will present the link between chronic disease and diet, and the importance of plant-based nutrition amid COVID-19 — even in a country that successfully contained a major outbreak. Dr. Lee is the director of VegeDoctor, an organization made up of plant-based medical practitioners based in Korea, and head of the Occupational and Environmental Medicine Center at Sun Medical Hospital in Daejeon, Korea.
