“My Plant-Based Journey”by Dr. T. Colin Campbell, Author: The China Study
Thomas Colin Campbell is an American biochemist who specializes in the effect of nutrition on long-term health. He is the Jacob Gould Schurman Professor Emeritus of Nutritional Biochemistry at Cornell University. Campbell has become known for his advocacy of a low-fat, whole foods, plant-based diet.
He has been dedicated to the science of human health for more than 60 years. His primary focus is on the association between diet and disease, particularly cancer. Although largely known for the China Study–one of the most comprehensive studies of health and nutrition ever conducted, and recognized by The New York Times as the “Grand Prix of epidemiology”–Dr. Campbell’s profound impact also includes extensive involvement in education, public policy, and laboratory research.
Eric L. Adams, Brooklyn Borough President (Keynote Speaker)
For the past three decades, Eric L. Adams has served the residents of the city of his birth as a police officer, state senator and coalition builder. In November of 2013, he was elected to represent all of Brooklyn as borough president. Born in Brownsville and educated in the City’s public school system, Eric is committed to ensuring Brooklyn’s bright future by helping each and every Brooklynite reach his or her full potential.
By adopting a Plant-Based diet he has overcome Type 2 Diabetes and now he has become one of the champions in encouraging New Yorkers adopt a Plant-Based diet.

Rico Hill, Speaker & Director The Beehives
Rico Hill left a lucrative career producing hit TV programs for the Nickelodeon Kid’s Network, to helping to produce Healthy people — mentally, physically and spiritually. As speaker/director for the Beehive Ministry, Rico has now authored 3 books, hosts a health outreach program on 3ABN’s Dare to Dream Network called From Sickness to Health, and travels the country as a Health Evangelist.
During the Spring of 2018, Rico was the Keynote Speaker for an event in CT where he promoted a Plant-Based lifestyle before 600 attendees. Rico Hill was also the Main Speaker at our 2018 Plant-Based Summit!
Hana Kahleova, M.D., Ph.D., M.B.A.
Dr. Hana Kahleova is the Director of Clinical Research for PCRM (Physicians Committee for Responsible Medicine). She has conducted several clinical trials, using a plant-based diet in the treatment of obesity, diabetes and metabolic disease. Her research showed that a plant-based diet leads to a greater weight loss and improvement in metabolism, and reduces muscle fat more than a conventional hypocaloric diet in people with type 2 diabetes. This reduction in muscle fat was also associated with improvements in glucose metabolism and insulin sensitivity.
She completed her postdoctoral research fellowship at Loma Linda University.
As a member of the American Diabetes Association and as a Board Member of the Diabetes and Nutrition Study Group of the European Association for the Study of Diabetes, Dr. Kahleova is directly involved in the process of updating the nutritional recommendations for patients with diabetes. She has recently co-authored a systematic review and meta-analysis published by this group of diabetes experts (Portfolio Dietary Pattern and Cardiovascular Disease: A Systematic Review and Meta-Analysis of Controlled Trials).

Since 2014, Heidi’s Health Kitchen has offered over 45 FREE Plant-Based Cooking Demos in New York City alone, to spread Wellness through a Plant-Based Diet and a Healthy Lifestyle.

Martin Raj, The Ark Lifestyle Education
As a Health Instructor, he travels to different places to educate people in Healthful Living and provide Lifestyle Counselling. Currently he provides health lectures, cooking classes, natural remedy demos, and hydrotherapy training at Education Centers, Senior Centers and Churches. He also provides personal lifestyle counselling. His greatest joy is reaching as many people as possible to enlighten them about health in its truest light and help them see how powerful nature can be as a curative agent.
Racquel St Juste, Co-Founder of Eden Lifestyle
Racquel St Juste, co-founder of Eden Lifestyle; an organization that uses natural principles to assist healing, has devoted her life in helping humanity using a wholistic approach. She has been instrumental in conducting health seminars, workshops, and at home lifestyle aid both in the US and internationally. She currently serves as a Gospel Medical Missionary, following her divine calling in restoring lives. Along with her entire team at Eden lifestyle, they operate a natural health retreat (Eden Lifestyle Home) and a plant based health food store (Eden Life Market) in New York. As a young entrepreneur, Racquel also manages a natural beauty product line called, “Old Beleaf”. Her ultimate desire is restoring lives, wholly, one person at a time.
