VEGUARY Wrap Up -Buddha Bowl Potluck & Chef Challenge

FOR VEGUARY we challenged you to go whole-food, plant-based for the month of February. And now as promised, we are starting March with a fun and delicious followup to see how everyone did and to encourage you to stay on this journey.
WHAT WE HAVE PLANNED:
– We have a delicious make your own Buddha Bowl potluck planned where everyone signs up to bring items to participate.
– In addition we will be having a chef challenge for the delicious sauces that you will top your Buddha Bowl with, then vote on a winner.
– Some participants will share their success stories!
Please note while this is a free event, PlantDiego does have many unseen overhead & ingredient expenses to keep our non-profit running and to allow us to host all these events. We’re asking for a suggest donation of $5 at the event but any amount is appreciated to help cover costs of sauce ingredients and to help keep all these great events coming in the future. Your donation is tax deductible and we really appreciate your support.

Okay now the fun part – For the CHEF CHALLENGE
Anyone may apply to participate in the challenge. Whether you are a home chef or a professional chef you are invited to apply. There are some guidelines you must follow and you must submit your application by February 19th. We will select three or four chefs to participate in making and providing the delicious sauces for our meal. Chefs will be reimbursed for their ingredient supplies, if needed. *** For the Buddha Bowl Potluck Participants:
– After you RSVP here please go to http://bit.ly/2HiroW2 to add what food(s) you will be providing to share with the group potluck Buddha Bowls. That will allow us and everyone else to see what is being brought. *Remember all items must be WFPB-oil free, low salt, and fully prepared and ready to be served and cooked (if not a raw item) prior to arrival. Cooked items may be baked, sauteed in veggie stock, steamed, or roasted with only a little cooking spray on the pan to keep from sticking. Please provide at least 6 to 8 servings. Bring a serving utensil, and bring your own 3-4 cup bowl for your eating dish and your own eating utensils along with what ever you would like to drink. Let’s make our bowls creative, see below for a list of suggested items to choose from. Or if you have one not listed that is fine too. Once we have more than enough of one item spoken for I will mark it as taken next to the item list.
BUDDHA BOWL SUGGESTIONS
– Greens; spinach, red leaf, arugula (TAKEN), frisee, escarole, kale,
– More greens; romaine, bib lettuce, radicchio, butter lettuce,
– shredded carrots, sliced purple carrots,
– roasted or steamed carrots, roasted cauliflower, charred broccoli
– thin sliced red cabbage – TAKEN
– roasted or sauteed napa cabbage
– any type of nuts or seeds
– roasted eggplant
– sauteed mushrooms
– roasted red & yellow peppers
– slivered fresh raw yellow peppers
– sliced or shaved raw zucchini
– diced cooked zucchini or squash of any type
– Grains; quinoa (TAKEN), barley, oat groats, faro, brown rice (TAKEN),
lentils (TAKEN), millet
– Beans; red, black (TAKEN), garbanzo, lima, edamame, black eyed, butter beans, pinto (TAKEN)
– tempeh, seitan, tofu, soy curls, toasted curried chickpeas
– cooked whole grain pasta, rice noodles
– micro greens, scallions
– sprouted mung beans or lentils (TAKEN)
– roasted brussels sprouts (TAKEN)
– baked rye or hole grain croutons
– avocado, halved cherry tomatoes, roasted tomatoes
– roasted or baked red or new potatoes, sweet potato (TAKEN)
